Ingredients:
Dressing:
1/4 cup olive oil
1 lemon wedge, squeezed
2 teaspoons salt
1/2 teaspoon pepper
Pasta:
Approx. 1 pound of whole wheat penne or rigatoni
1/4 cup of butter
1 cup cherry tomatoes, cut in half
1 cup grated parmesan
1/2 cup toasted pine nuts
Directions:
For the dressing:
In a small bowl, whisk together the dressing ingredients until smooth.
For the pasta:
Cook the pasta for 8-10 minutes.
In a skillet, brown the butter for 3-5 minutes until melted and sizzling.
Toast the pine nuts for 1 minute in a skillet.
Add the pasta, dressing, tomatoes, pine nuts and parmesan into a big bowl and toss.
